Microwave Peanut Brittle Recipe

1 c. sugar
1/2 c. white corn syrup
1 c. raw peanuts
1/8 tsp. salt
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

Directions:
Lightly butter a flat cookie sheet.

In a 1 1/2 quart microwaveable dish, stir together the sugar, syrup, raw peanuts, and salt, mixing well. Microwave at High for 6 to 9 minutes until light brown. (I microwave mine 8 minutes.) Remove from microwave and stir in butter and vanilla, mix well. Microwave at High 2 minutes more. Peanuts will be light brown and syrup will be VERY HOT ! Add baking soda and gently stir until light and foamy. Be sure to stir all areas of bowl. (This has to be done pretty fast as brittle will harden quickly.) Pour onto lightly buttered cookie sheet. Let cool ½ to 1 hour. When cool, break into small pieces.

Bowl looks like it will never come clean, but soak in warm soapy water for a few minutes. You may have to chip away some dry areas on outside of dish, but it is easy to clean.
