1 Tbs. butter or margarine
1 Tbs. all-purpose flour
1/4 tsp. salt
Dash of pepper
1 1/2 cups milk
2 cups diced, cooked potatoes
2 Tbs. minced onion if desired

Directions:
Directions:
Melt butter in saucepan over low heat.
Blend in flour, salt and pepper.
Add milk.
Cook, stirring constantly until mixture thickens.
Remove when mixture bubbles.
Add potatoes and onion.
Heat through and adjust seasonings to taste.
