10 pounds cooking apples (about 30 apples)

6 cups of sugar or to taste (I use less)
½ tsp allspice
½ tsp cloves
1 tsp cinnamon

2 tsp grated lemon rind

Directions:
Directions:
Quarter and core about 30 apples. Add 4 cups of water or apple juice. Cook until soft about 20 minutes. Force through a food mill or sieve. There should be about 12 cups of pulp.

Add remaining ingredients. Cook until fairly thick, stirring almost constantly sp that it doesn’t burn. Can also cook it in a roaster in the oven. Seal in hot sterilized jars. Makes about 6 pints.
