3 cups grated zucchini, unpared
1 cup bisquick
1/2 cup finely chopped onion
1/2 cup grated Parmesan cheese
2 Tablespoons snipped parsley
1/2 teaspoon salt
1/2 teaspoon marjoram or oregano
dash black pepper
1 clove garlic, finely chopped
1/2 cup vegetable oil
4 eggs, slightly beaten

Directions:

Grease 9 x 13 pan. Mix all ingredients together. Spread in pan. Bake at 425º
for 25 - 30 minutes. Let "set" for 2 or 3 minutes. Cut through with sharp knife into 2 x 1 inch rectangles. Serve warm. May be made ahead and frozen for parties. Bake, cut and cool, then spread, not touching, on a flat surface to freeze individually. Pack carefully into freezer container placing a sheet of waxed paper between each layer. Yield: 4 dozen.
