1 large onion sliced into thin strips
1 cup apple juice
6 boneless, skinless chicken thighs
4 tbsps. yellow curry powder
1/2 cup brown sugar
salt and pepper

Directions:
Preheat oven to 350ºF. Chop chicken thighs into bite sized pieces and place on baking sheet. Sprinkle with salt and pepper. Place in the oven and bake for about 15 to 20 minutes or until cooked through.

While the chicken pieces are baking, slice the onion and place the strips in a skillet or wok on the stove top with the apple juice. Simmer the strips in the juice on low heat until they are tender and the juice is reduced to about 1/4 of its original amount.

Drain the liquefied fat from the cooked chicken pieces. Add the drained chicken pieces directly to the onion and apple juice mixture and stir.

Whisk the curry powder into a tiny amount of water before adding it to the mixture. Allow the mixture to simmer on low heat for 4 minutes before adding the brown sugar. Add the brown sugar and simmer again for 2 minutes.

When finished, serve over cooked Basmati or Jasmine rice.

If desire, you can add any vegetables that might compliment the dish. Sliced red pepper, broccoli florets, and cauliflower are delicious in curries. Be sure to soften the vegetable pieces first .
