2 c. + 2 T. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. shortening
1/2 c. brown sugar, firmly packed
1/2 c. white sugar
1 egg
1 tsp. vanilla
1 pkg. (6 oz.) butterscotch morsels
1 can (13 1/2 oz.) crushed pineapple, well drained

Sift together the dry ingredients and set aside. Work the shortening with a spoon until soft. Gradually add the sugars while beating. Beat egg and vanilla until light and add to sugar/shortening mixture. Beat until fluffy and light. Add dry ingredients and mix until smooth. Stir in the butterscotch morsels and pineapple.

Mix well and drop by spoonfuls on cookie sheet. Bake 10-14 minutes at 375º or until done. Scrumptious!
