1 package thinly sliced chicken cutlets
1 egg
1 cup seasoned bread crumbs
1/2 cup no salt matzo meal
1/4 to 1/2 cup grated Parmesan cheese
1 to 2 cans chicken broth
Paprika

Directions:
Directions:
Preheat oven to 350º

Dredge chicken cutlets in 1 beaten egg.
Mix all dry ingredients together and coat chicken thoroughly.
Fry chicken cutlets in olive or canola oil.
Drain cutlets on paper towel.

Place cutlets on a large baking dish and cover generously with chicken broth (fresh onions, mushrooms, or other vegetables can be added).
Bake for 30 to 45 minutes.

Add paprika for color when serving.
