1 pound ground beef,
1 pound pork sausage
1 1/2 chopped onion
Green, red or yellow bell peppers
1/2 cup chopped celery
2 teaspoons minced garlic
Cumin or hot paprika to taste
1 1/2 cups cooked long grain rice
1/2 teaspoon salt to taste
4 teaspoons unsalted butter
1 cup dry bread crumbs
3 Tbsp. each of grated Parmesan cheese and parsley leaves.

Slice the tops of green, red or yellow bell peppers. Clean and clear out all the veins and seeds. Cook rice with butter and onion together until golden. Add all other ingredients, add cumin or hot paprika to taste. Let cool down and stuff your peppers.
I freeze them in a 2 pack, as we enjoy them all winter. Our friends are always surprised in winter months to have such an easy meal that tastes garden fresh.

Before you serve, fresh or from the freezer, serve with chopped tomato and shredded cheese for garnish on top. Garden fresh, always in the fall and winter months. Serve with a good salad and you have a meal all together.
