2 Tbsp. butter or cooking oil
1/2 cup minced onion
1/3 cup finely chopped green pepper
1/3 cup finely chopped celery
1-1/2 lb. ground beef
1/2 cup chopped mushrooms (optional)
1 cup catsup
1-1/2 Tbsp. brown sugar
1-1/2 Tbsp. vinegar
Salt and pepper

Directions:
Directions:
Sauté the onions, peppers, and celery in butter or oil until translucent. Add ground beef; cook and stir until lightly browned and crumbly. Add catsup, brown sugar and vinegar (and mushrooms, if using). Adjust seasonings to taste. Finish with salt and pepper.

Serve with toasted buns or small dinner rolls for little appetites. Sometimes we top the meat with hamburger dills.

I never could capture the taste of the wonderful "barbecue" sandwiches at Fremming's Hot Shoppe in Westons Mills, Pickup's Diner in Olean, or the Chuck Wagon on the Hinsdale Highway, but we like these.
