Aunt Helen's Pierogi Recipe

6 cups flour
3 eggs
3/4 tsp. salt
1/2 cup milk

POTATO FILLING:
6 large potatoes
Water to cover
1/2 lb. Cheddar or farmer's cheese
1 onion, chopped
1/2 cup sour cream
Salt and pepper to taste


SWEET CHEESE FILLING:
1 large egg, beaten
1 Tbsp. sugar (or to taste)
1/2 tsp. vanilla extract
1 lb. farmer's or Ricotta cheese
1 Tbsp. chives

Put flour in bowl; make a well into which you place the eggs and then combine. Add salt and milk. Knead to make a not-too-stiff dough. Let dough rise (covered). After filling is made, make a long roll of dough. Cut out circles to fill.

POTATO FILLING:
Boil potatoes with lots of salt for about 20 minutes or until done. Chop and sauté onion in butter. Drain potatoes well. Grate cheese and sprinkle over potatoes to melt. Add sour cream, sautéed onion and butter. Beat well. Salt and pepper to taste.

Roll and fill dough circles, pinching edges. Drop into boiling water and cover. When pierogi float, remove and drain. Sauté in butter with fried onion slices and serve with sour cream, apple sauce, or onion dip. This recipe freezes well.

SWEET CHEESE FILLING:
Mix together all ingredients and drop by teaspoonsful onto pierogis. Pinch edges and boil and fry as usual. Can be served as a dessert.
