3 eggs, beaten 1 c. sugar
1 c. corn syrup 1/4 c. milk
1/4 tsp. salt 1 tbsp. flour
2 tbsp. butter 1 tsp. vanilla
1 c. chopped pecans

MINIATURE PIE CRUSTS:
1 c. butter 8 oz. cream cheese 2 c. flour

Directions:
Beat eggs well. Add sugar, corn syrup, vanilla, and milk. Beat well. Mix flour and butter into mixture. Stir in pecans. Do not beat. Pour into a 9" unbaked pie shell and bake for 50 minutes at 350º. Pie is done when golden brown and the center will be set when you shake the pie gently. For miniature pies: Soften butter and cream cheese. Beat together. Add flour and make a soft dough. With fingers, mold pieces of dough into muffin tins forming like pie shells. Use one recipe of pecan pie filling. Fill shells 3/4 full and bake 350º for 25 minutes. Makes 4 dozen and freeze well.
