1 lb. chopped beef
1 Tbsp. finely chopped onion
3 Tbsp. grated Romano Cheese
2 Tbsp. chopped parsley
6 Tbsp.olive oil
1 egg
1 Tbsp. grated garlic
Salt and pepper to taste
3 - 4 slices stale bread

Soak bread in water for 5 minutes; squeeze dry. Mix thoroughly with meat, slightly beaten eggs, Romano cheese, garlic and parsley. Add salt and pepper to taste. Shape into balls about the size of golf balls; roll in flour. If meat mixture seems too loose, add Panko bread crumbs until the mixture is the correct consistency.

Fry in hot oil for about 10 minutes

OR

Bake in oven (about 45 minutes) on a foil-lined baking sheet until browned.

With either method, add partially cooked meatballs to warm tomato sauce and simmer about 20 minutes to soften and finish cooking.

MEATBALL SANDWICHES:
These meatballs make great sandwiches when served on crusty Italian rolls topped with red sauce, a slice of provolone and Parmesan cheese.

MEATBALLS AND BROWN GRAVY:
These meatballs also are delicious simmered in brown gravy and served over rice or flat egg noodles.
