2 (1/4 to 1 lb.) pork tenderloins
1/2 tsp. salt
1 Tbsp. butter or margarine
1 Tbsp. vegetable oil
1/2 cup chopped pecans
1/2 cup maple syrup
1 Tbsp. stone-ground mustard
2 Tbsp. bourbon


Directions:

Sprinkle tenderloins with salt. Heat butter and oil in a large oven-proof skillet over medium high heat until hot. Add tenderloins and sear 3 minutes on each side until browned. Remove from skillet and place in a baking dish.

Meanwhile, combine pecans, syrup, and mustard in a small saucepan. Bring to a boil; reduce heat, and simmer, uncovered, 3 minutes or until thick. Stir in bourbon. Spread sauce over tenderloins in skillet.

Bake at 450 degrees for 12 - 15 minutes or until meat thermometer inserted into the thickest portion registers 160 degrees. Remove tenderloins to a serving platter, cover with foil, and let rest for 10 minutes. Slice and serve with sauce remaining in skillet.
