1 pint small beets (canned beets are fine)
1/4 cup sugar
1/2 cup vinegar
1/2 cup water or preferably beet juice from cooking
1/2 teaspoon salt
1 teaspoon whole mixed pickling spice
6 hard-boiled eggs, peeled

Directions:
Directions:
1. Cook, drain saving liquid, and skin beets, if not using canned,
2. Combine remaining ingredients, except eggs.
3. Pour over beets and simmer for about 5 minutes.
4. Cool.
5. Place eggs and cooled beet mixture in large jar.
6. Refrigerate.
7. Let pickle for at least 2 days before using.

Pickled beets and eggs were ALWAYS in my Gramma Susie's frig. They were always served for lunch with hot dogs. The eggs become an exquisite purple and they keep for a very long time. I think she just kept adding to the same jar!
