4 Tbsp Cornstarch
1 ½ cups Papaya or Guava or Apricot Nectar
4 Tbsp Lemon juice
4 Tbsp Sugar
½ tsp Salt
2 cups Diced fresh fruit such as papaya, pine apple, melon, oranges, guavas etc.

topping
1 cup Heavy cream
4 Tbsp Sugar
½ cup Moist shredded coconut
½ cup chopped peanuts

Directions:
Directions:
In a 2-quart saucepan: Bring to the boiling point: Cornstarch, nectars, lemon juice. Add Sugar & salt. Cook until thick and clear. Cool Slightly.
Add diced fruit. Cool to room temp. Pour into pie shell, chill.

For topping: Whip Heaving Cream and Sugar until fluffy, do not over beat. Sprinkle top with shredded coconut and peanuts
