2 Cups Dried Pinto Beans -- soaked
3 Large Potatoes -- chopped
3 Stalks Celery -- chopped
1 Medium Onion -- thinly sliced
4 Tbsp Peanut Oil
1 tsp Salt

Directions:
Directions:
Cover beans with water and bring to boil. simmer until tender. Add potato, celery or salt and more water if necessary to cover. simmer over low heat. just before potatoes are tender, fry onion in oil using a slotted spoon add beans and potatoes to onion and fry until warm. serve over rice.
