1/2 c. firmly packed brown sugar
8 Tbsp. (one stick) unsalted butter, at room temperature
1 large egg
1/2 c. molasses
1/2 c. buttermilk
1 tsp. vanilla extract
1/4 tsp. ground nutmeg
2 c. all-purpose flour
1 Tbsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt

For the filling:
2 c. finely chopped apples
1/2 c. water
1 c. firmly packed brown sugar
1 tsp. cinnamon

Pre-heat oven to 350º. Oil and flour 2 8"-pans

In a bowl, cream brown sugar and butter. Add egg and molasses; blend well. Beat in buttermilk, vanilla, and nutmeg. Into a second bowl, sift flour, baking powder, baking soda and salt. Add flour mixture to molasses mixture and mix good. Pour 1/2 of the batter into each of the pans.

Bake for 15-20 minutes. Let cakes cool.

FILLING: In a medium sauce pan on medium heat, combine apples and water. Cook until apples are tender. Stir in brown sugar and cinnamon, bring to boil. Boil until thick and syrupy.

With one cake on the serving plate spread half the filling on top of it; place second cake on top of that and spread remaining filling on top.

Not for the faint of heart; has lots of carbs. Just good eaten'. The longer it last the better it gits, but it dont last long here.
