2 cups uncooked macaroni (8 oz.)
2 cups hot water
1/3 cup butter or margarine
1/4 cup chopped onion (or dried onion flakes)
3/4 tsp. salt
1/2 tsp. pepper
1/2 tsp. dried mustard (or 1-1/2 tsp. prepared mustard)
1-1/2 cups milk
8 oz. shredded cheddar
2 oz. shredded Gruyere
2 oz. shredded Romano (optional)
1/4 cup all-purpose flour

Mix macaroni, water, margarine, onion, salt, pepper, and mustard in a 2-quart buttered casserole. Cover tightly and microwave on high (100%) for five minutes; stir. Season to taste. Cover tightly again and microwave on medium (50%) to boiling, 4 to 6 minutes.

Stir in remaining ingredients, reserving some of the cheese to top the casserole. Then, either:

a.) cover tightly and microwave on high (stirring every four minutes) for 10 minutes or until the mixture is bubbly and the macaroni is tender (10 to 12 minutes). Add the remaining cheese topping and microwave 2 minutes or until melted.

OR

b.) top with the remaining cheese, pepper, and chopped parsley and bake in the oven at 350 degrees for about 30 minutes.
