2 quarts raw potatoes, pared
3 leeks OR 1/2 cup chopped onion
1 chicken bouillon cube
2 quarts boiling water
2 tsp. salt
1/2 cup butter
2 Tbsp. flour (more for thicker soup)
2 quarts milk (or cream)
2 tsp. parsley
Salt and pepper to taste
Grated cheese (your choice or flavors)

Chop potatoes and onion finely and cook in the boiling water with the salt and bouillon cube until potatoes and water are thick.

In a separate pot, melt butter, add flour, stir until smooth and then add the milk (or cream or half milk-half cream). Cook until thick and smooth. Add potato mixture, stir to combine thoroughly and add chopped parsley.

Ladle into serving bowls and garnish with additional parsley and cheese. Serve immediately.

This soup is perfect on a cool winter evening. Serve with crusty bread and a salad for a complete meal.

VICHYSSOISE: This potato soup makes wonderful Vichyssoise. Chill the finished soup and serve it cold, topped with chives or parsley, as a first course.
