Fried Quail, Gravy, & Biscuits Recipe

Ingredients: Freshly dressed quail (may substitute red squirrel) salt water flour cooking oil 2 cups of milk salt pepper hot biscuits

Directions:Freshly dressed quail cut into pieces should be soaked over night, or at least several hours in salt water. Remove and rinse well, while heating oil in a heavy skillet over a moderate flame. Oil should be at least 1/2 inch deep.
Dredge quail in flour, or shake in paper bag into which flour has been put, until all pieces are well coated. Drop into hot skillet, cover, but not too tightly. When crisp and well browned on one side, turn and brown on other side
Remove from skillet, drain excess fat on several thicknesses of paper towel. Pour frying grease from skillet, retaining only enough to make gravy (about 2-4 tablespoons ). Thicken with flour, stirring to blend while adding about 2 cups of milk. Continue stirring till proper thickness of gravy. The heat should be turned low, and gravy should strike a boil in order to cook flour. Add salt and pepper to taste and serve with hot biscuits. |
