Raisin Bars:
1 c. raisins
2 c. water
1/2 c. butter or other shortening
1 c. sugar
1 3/4 c. all-purpose flour
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. soda
1/2 tsp. salt

Butter Cream Frosting:
2/3 c. butter or margarine
2 2/3 c. confectioner's sugar
3 Tbsp. milk
1 tsp. vanilla cream shortening

Directions:
Directions:
Boil raisins in water for 10 minutes. Pour over shortening and cool well. Mix with dry ingredients. Bake in a 9" X 13" pan at 350º for about 30 minutes. Ice with butter cream frosting.

BUTTER CREAM FROSTING: Cream 2/3 c. butter or margarine, 2 2/3 c. confectioner's sugar, 3 Tbsp. milk, 1 tsp. vanilla cream shortening until smooth and satin-like. Add powdered sugar and milk until well blended and smooth. Add vanilla.

This recipe came to me from my mother, Mae Schuckers. In the LCA there was a Town and Country Ministry and she served as their treasurer/bookkeeper even through to the ELCA beginning and then it was phased-out, but during her time of serving she would invite the Board and the Intern Pastors to the farm for a lunch each year and this was a dessert she often served.
