1 1/2C sugar
1/2 C butter, softened
1/4 C applesauce
4 Large eggs
3 C flour
1 T baking powder
1 T poppy seeds
1/2 t baking soda
1/2 t salt
3/4 C buttermilk
1/3 C fresh lemon juice (3 lemons)
1 t vanilla extract
1 t lemon extract
1 1/2 C fresh blueberries

Glaze:
1 C powdered sugar
1 T buttermilk
1 T lemon juice

Directions:
Directions:
Preheat oven to 350. Preheat oven to 350F. Spray a bundt pan with non-stick spray. In a large bowl, beat butter and eggs until creamy. In another bowl, combine dry ingredients. In a third bowl, combine milk, lemon juice, and extracts. Alternate beating in dry mixture, then wet mixture into butter/sugar mixture. When well mixed, stir in blueberries. Pour batter into bundt pan. Bake 45 min. or until toothpick comes out clean. Cool 10 min then remove from pan. Whisk glaze ingredients together and pour over warm cake.
