About 2 pints fresh grape or cherry tomatoes (cut in halves or quarters)
3-4 cloves garlic, smashed and chopped
Extra virgin olive oil (EVOO)
4-5 basil leaves
Few sprigs fresh parsley
1/2 tsp dried oregano
1/2 sweet onion, finely chopped

Directions:
Directions:
Saute` EVOO, garlic and onions until clear (don't brown).
Add remainder of ingredients.
Cook on high heat till bubbly, then on medium till most of watery liquid is dissolved.
Simmer for an additional 5 minutes.
That's it, enjoy on pasta, fish or vegetables!

Erica made this sauce up when we had an abundance of tomatoes in late summer one year, and along with Bruschetta, has become a favorite. It also makes the whole house smell wonderful!!!
You can use any tomatoes for this recipe, just cut in small pieces first.
