1 1/2 C rice
3 tbsp butter
1 medium onion well chopped
3 C beef or chicken broth
1 large can of mushrooms
1 tsp chopped parsley
1 tsp curry powder
1 tsp preferred herb (tarragon, thyme, sage, basil)
dash nutmeg
salt, pepper and paprika to taste
1/2 C dry white wine
grated Parmesan cheese

Directions:
Directions:
Saute onion and mushrooms. Wash and drain rice. Add rice to onion. Saute until rice is transparent. Add broth, wine and seasonings. Pour into baking dish and bake at 400 º for 40 minutes. Sprinkle with Parmesan cheese before serving.
