1 Cup Oleo/Butter
1/2 Cup Brown Sugar or Truvia Sweet Complete Brown
2 Egg (Separate Yolk and Whites)
1 tsp Vanilla
1/2 tsp Salt
2 Cup Flour
2 Cups Chopped Walnuts

ICING FOR COOKIES
1 Stick Oleo/Butter
1 tsp Vanilla
1 Cup Powered Sugar or Truvia Confectioners

CREAM CHEESE ICING
8 oz Cream Cheese

Directions:
Directions:
Mix shortening, sugar, egg yolk and vanilla in bowl until light and creamy. Add flour, salt mixing until it forms a heavy dough that can be rolled into walnut size balls. Whip egg whites until they foam then put balls in the whipped egg whites, then roll in chopped nuts and place on cookie sheet 2" apart. Bake in oven at 375º for 5 minutes and take them out of oven and press your thumb in the middle of the cookie. Put back in oven for 8 more minutes till they are brown.watching so they don't burn.

To make icing beat oleo, powered sugar and vanilla until creamy. Place icing in thumb print. You can also add 8oz of cream cheese to make a cream cheese icing filling.
