2 cups butter
3 cups sugar
4 eggs
1 cup molasses
7 cups flour
3 tsp soda
2 tsp salt
4-5 cups coconut
1-2 cups broken or chopped walnuts or pecans

Directions:
Directions:
Cream butter and sugar together. Add eggs and molasses and mix thoroughly. Mix in flour, soda, and salt. (For a thicker cookie, use a little more flour.) Stir in nuts and coconut. Scoop up balls of dough and bake on cookie sheet at 350° for 12-13 minutes.
They freeze well but will stick together unless you wrap them each separately.
They are the perfect “cake” for homemade ice-cream sandwiches
