Ingredients: 1 teaspoon Fresh Ginger 2 teaspoons Cardamom Seeds (preferably in their pods) 1 Cinnamon Stick 1 Cup Water 1/8 Cup Milk (Add more for creamier tea) 1 teaspoon Black Tea (English Breakfast or Darjeeling; can use one tea bag if you don't have loose leaf tea) 1 teaspoon Honey or Sugar (more or less to taste)

Directions:Slice ginger into small thin strips, then crush with the side of knife blade and add to a small saucepan. Crush cardamom pods with knife blade and add to saucepan. Crush well. Crush Cinnamon and add small amount to saucepan (cinnamon can overpower the tea so be careful no to over do it). Add water and bring to boil. Once water boils add milk. The temperature will drop for a minute or two, then the milk will boil and suddenly rise up fast and threaten to boil over. Let the milk rise but remove from heat before it boils over. Add the tea. Let steep for 2-3 minutes. Strain into a mug. Add sugar or honey to taste. |

Notes: My old friend, Dhruv Tripathi, told me once that all families in India have their own recipe for Chai. 'Chai' is the Hindi word for 'tea' (derived from the Chinese word for tea, 'cha'), and in India tea is usually spiced and served with milk and sugar. This recipe is the method Dhruv learned from his family. It's a great recipe to experiment with to perfect the flavor you like best. I personally like it with lots of ginger and cardamom, so I add extra. Many people add more milk. It's easy to prepare provided you have the ingredients.
