2 3/4 c. water
1 1/2 c. white rice
3 T. vegetable oil
2 eggs, beaten
2 cloves garlic, chopped
2 in. fresh ginger, minced or grated (in a pinch you can use approx. 2 tsp. ground ginger)
1/2 c. shredded carrots
1/2 c. frozen peas (or just thaw a bag of frozen peas with carrots)
4 green onions, thinly sliced
1/3 c. soy sauce

1. Bring water to a boil. Add rice, reduce heat, cover and cook over medium low heat until tender, 15-18 mins. Spread rice out on a cookie sheet to quick cool it.
2. Heat a wok shaped skillet or large nonstick over high heat. Add oil to the pan. Add eggs to hot oil and break into small bits as it scrambles. When eggs are scrambled, add garlic and ginger to the pan and quick stir-fry peas and carrots for 2 mins.
3. Add rice to the pan and combine with vegetables. Fry for 2-3 mins. Add soy sauce and green onion and fry 1 more min., then serve.

Use leftover rice or cook the rice the day before to save time (since you want cooled rice).
Make it a meal by adding some cooked chopped chicken, pork or beef and mix in until heated.
