Ingredients:
Ingredients:
1/2 cup butter, softened
1 cup sugar
1/4 cup milk
2 eggs
1 1/2 cups flour
1 tsp. baking powder
1/2 tsp. salt
grated rind of 1 lemon

Directions:
Directions:
Mix all ingredients together. Pour in greased and floured loaf pan - I like to line the bottom first with parchment paper for easy removal of bread from pan. Bake 1 hour at 325º.

In the meantime squeeze all of the juice from the lemon and mix with 1/2 cup sugar. When you remove the bread from the oven, pour the juice/sugar mixture over the top and return the bread to oven for 5 minutes.
