Seared Salmon with Sauteed Spinach and Ginger-Soy Vinaigrette Recipe

Ingredients: GINGER SOY VINAIGRETTE 1/4 cup olive oil 3 tbsp. fresh lime juice 2 tbsp. soy sauce 1 tbsp. grated, peeled fresh ginger 1/2 tsp. minced garlic kosher salt and freshly ground black pepper, to taste
SPINACH 1 tbsp olive oil 10 cups fresh spinach leaves 2 tsp. grated, peeled fresh ginger kosher salt and freshly ground black pepper, to taste
SALMON 4 6-8 oz. salmon fillets, skin removed 2 tbsp. olive oil kosher salt and freshly ground black pepper, to taste

Directions:For the vinaigrette, stir all of the ingredients together in a bowl and season to taste with salt and pepper
For the salmon, preheat a large pan or griddle on high heat until very hot. Season the salmon fillets on both sides with salt and pepper and brush with olive oil. Sear the salmon until golden brown and a nice crust has formed, about 1.5-2 minutes per side. (Depending on the thickness of the fillets or how done you want it, you can sear it then throw the pan into a 375º oven to finish)
For the spinach, heat the olive oil in a saute pan over high heat. Add the spinach and cook until just about wilted, about 3 minutes. Add the ginger, garlic and 2 tbsp of the vinaigrette and toss to combine. Season to taste with salt and pepper and remove from heat.
To serve, divide equal parts of the spinach on the plates and place a salmon fillet on top. Spoon some vinaigrette over the top and serve. |
