2-3 pints of strawberries
5-8 tbsp sugar, to taste
10 tbsp aged balsamic vinegar
1/2 tsp vanilla, or to taste
14 oz mascarpone cheese
4-5 leaves finely sliced fresh mint or basil

Directions:
Slice the strawberries into halves or quarters and place in a bowl. Mix 1 tbsp sugar to 2 tbsp balsamic vinegar in a separate bowl and pour over the strawberries. Refrigerate for up to two hours.

Mix the vanilla with the mascarpone cheese and add enough sugar to sweeten. Mix until creamy.

To serve, place a lob of the cream onto a plate and top with strawberries and some of the marinade. Finely slice the mint or basil and top.

This is one of our favorite desserts. It may sound like some very odd combinations, but it's a delicious and very fresh dessert. April requests it whenever strawberries are in season. We prefer fresh basil instead of mint.
