3 c. warm water
1 1/2 T. yeast
1 1/2 T. kosher salt (can do a little less to taste)
6 1/2 c. flour

Mix water, yeast, salt together, and then mix in flour. Cover and let rise for 2 hours. After that, you can put it in the fridge (for a couple of hours and up to 7 days!) to make it less sticky to work with or just put a lot of flour on your hands. Make four balls out of the dough. Place on wax paper or tinfoil sprayed with pam. Let rise for another 30 minutes. While rising, heat oven to 450 with a broiler pan of water in the oven. Also, if you have a pizza stone, it works best to cook your bread on that, although a cookie sheet works. (Place the stone in the oven to heat up as well.) After dough has risen, place in oven to cook for 20-25 minutes.
