Grated peel of fresh lemon
Juice of fresh lemon
1 teaspoon onion salt
Fish fillets - at least one per person
1/3 cup flour
1/2 teaspoon paprika
1/2 stick of butter or 1/2 cup canola oil
Lemon wedges

Directions:
Directions:
In a cake pan or other flat dish, combine lemon peel, lemon juice and onion salt. Add fillets and let stand 10 minutes, turning once or twice. Meanwhile, in another shallow dish combine flour and paprika. Lightly coat fillets with flour mixture. In a large (cast iron) skillet, heat butter. Saute fillets 3 - 4 minutes until lightly browned (preferably in a cast iron skillet) until the fish flakes easily with a fork Serve with lemon wedges.
