Lutefisk, boiling water, salt, butter

Fresh lutefisk cut into serving size pieces. In large pan (soup pot) boil water and drop lutefisk into it. Bring back to boil and watch closely until fish flakes away easily from skin.If boiled too long it will be mush!! Drain and remove skin - serve immediately while hot. Pass the melted butter in a gravy boat and gravy ladle. Serve with mashed, riced or boiled potatoes, sweet soup, peas and of course lefse.

This is our Christmas Eve dinner with meatballs for the in-laws & grandsons. They always try a little of it. They really like the lefse. You don't have to soak it as long anymore as we used to and I don't use cheese cloth to put it into the water like I use to because of the large spatulas with holes in them to lift it out of the water. Ya sure ya betcha!!
