3 medium Peaches, washed, peeled, coarsely chopped
1/2 small Red Bell Pepper, washed, cored, seeded, diced
1/2 small Green Bell Pepper, washed, cored, seeded, diced
1/4 Red Onion, peeled, diced
1/2 Jalapeno Pepper, seeded, diced
1/4 cup Fresh Cilantro Leaves, chopped
1 tbsp Fresh Lime Juice
4 (4 oz.) Mahi-Mahi steaks
1 tbsp Olive Oil
1/2 tsp Salt
1/2 tsp Freshly Ground Black Pepper

1. Place peaches, peppers, onion, cilantro, and lime juice in a large bowl. Stir to blend well. Cover and refrigerate.
2. Wash fish and pat dry with paper towels.
3. Brush Mahi-Mahi with oil and season with salt and pepper.
4. Prepare grill by brushing rack with olive oil so the fish won't stick to the surface.
5. Heat grill to medium-low.
6. Place fish directly on rack and grill for 5 minutes on each side or until fish is done and flakes easily.
7. Top with peach salsa and serve.
