3-4 large boneless skinless chicken breasts
1/2 inch cubes pepperjack cheese
1 can sliced pickled jalapeños
1 pkg good quality smoked bacon
1 1/2 c. white wine (cheap white wine works fine in this recipe and YES the alcohol is cooked out)

Pound out the chicken breasts with a meat mallet. Place the chicken breasts between 2-3 layers of plastic wrap or in a large ziploc bag. This will help cut down the splatter mess and will help keep the meat from tearing. Cut the flattened chicken in to strips about 1 1/2 to 2 inches wide. Place a cheese cube and a slice of jalapeño at one end of the strip and roll the chicken up. Wrap the rolled chicken in bacon tight enough to keep it from unrolling. Repeat this until you run out of chicken strips. Place the chicken rolls in a baking dish and pour the wine around them. The wine shouldn't be more than 1/4 inch deep. Cook "white wings" in a 350º oven for 20-25 minutes or until chicken is done. Internal meat temp should be 165º.
