1 pound ground round, 1 pound group pork, 3/4 cup chopped onions, 3/4 cup chopped green pepper, chopped garlic; finely grated carrot (optional), 1/2 cup ketchup, 2 tablespoons Pica Pepper Sauce, 2 tablespoons Crystal hot sauce, 3 eggs, hard boiled & chopped. PASTRY DOUGH: 8 ounces cream cheese softened, 2 sticks butter softened, 4 cups flour, 1/2 teaspoon salt, 2 tablespoons water, milk

MEAT FILLING: Cook ground round & pork with onions & green pepper; add carrot & garlic to taste. Add remaining ingredients & cook down until very dry. Drain oil from meat on paper towels. Add chopped eggs. Refrigerate meat mixture until ready to use.

PASTRY DOUGH: Mix cream cheese, butter, flour, & salt as for pie dough. Add extra flour as needed. Roll dough about 1/8" thick, cut into 5" circles. Use 2-1/2 tablespoons meat mixture per empanada & spread only in center of 5" circle. Fold dough over meat mixture forming a half-moon shape & seal edges with water, then crimp on both sides with fork to seal. Brush with milk. Bake on lightly greased baking sheet at 350* until brown (approx. 10-12 mins).

May be baked then frozen for serving later. Better when served warm.
