Directions:
Heat oven to 375ºF. Lightly sprinkle clean towel with powdered sugar; set aside. Grease bottom only of a 15-in. by 10-in. by 1-in. baking pan; line pan with waxed paper and grease again. In medium bowl, combine flour, 1/2 cup sugar, baking powder and 1/2 teaspoon salt; mix well.
In a large bowl, beat 9 egg yolks at high speed until light lemon colored. Gradually add 1/2 cup sugar, beating until thickened. Add water and lemon extract; blend well. By hand, gently fold dry ingredients into egg mixture; blend well. Spread batter in greased and paper-lined baking pan.
Bake at 375ºF for 15 to 18 minutes or until top springs back when touched lightly in center. Immediately invert cake onto sugared side of towel. Quickly remove waxed paper. Starting with shortest end, roll up cake in towel; cool completely on wire rack.
In small saucepan, combine 1/2 cup sugar, 1/8 teaspoon salt, lemon juice, butter and 3 egg yolks; blend well. Cook over low heat until thickened, stirring constantly. Remove from heat; stir in lemon peel. Cool to room temperature. Fold whipped cream into cooled filling mixture. Unroll cooled cake: spread filling mixture over cake. Roll up again. Cover; refrigerate 1 to 2 hours before serving. Store in the refrigerator.
