½ lb butter
2 tablespoons pistachios, toasted and minced
Juice of two lemons
1 tablespoon chopped parsley
1 tablespoon chopped chives
1 shallot, minced
Kosher salt and freshly ground black pepper to taste.

4 1 1/2 –inch-thick 12 ounce rib-eyes.

Combine butter, pistachios, lemon juice, parsley, chives and shallot in food processor and blend well, seasoning with salt and pepper to taste. Scoop butter blend onto a sheet of plastic wrap and roll into a thick log. Place in refrigerator to harden.

Take steaks from first portion (above). Slice butter into ¼ inch pieces and place onto warm steaks. Place steaks under broiler for 30 seconds to lightly melt butter. Serve immediately.
