Pie Dough:
1-1/4 cups all-purpose flour
1/4 tsp salt
2 tbsp shortening
4 tbsp butter
3-4 tbsp cold ice water

6 apples
pineapple juice (enough to cover apples)
1/2 cup sugar
1/2 tsp cinnamon
1/4 tsp nutmeg

1 tbsp butter (cut in 6 equal pieces)

Syrup:
1-1/2 cups sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 stick butter, salted
2 cups water
dash salt

Directions:
Directions:
Peel and core 6 apples. Place apples in large bowl and pour pineapple juice over apples. Let soak.
Make Pie Dough and chill: Combine flour and salt; cut in shortening. Cut butter in small pieces and add to flour mixture. Stir in only enough water to moisten flour. Form dough into ball. Wrap in plastic wrap and chill 30 minutes.
Mix sugar and spice together. Remove apples from juice and roll apples in mix.
Make Syrup: Mix together all ingredients Except butter; bring to a boil and simmer 5 minutes; stir in 1/2 stick butter.
Roll out dough into rectangle and cut into 6
(6-inch) squares. Place apple in center and fill each cavity with 1 tsp sugar mixture and 1/6 tsp butter or margarine.
Moisten edges of each dough square and fold each corner to the top-pinch the edges to seal. (Mold pastry around apple)
Place in pan-Pour syrup over each apple. Bake at 375º for 35-40 minutes. Place in soup bowl and pour syrup from pan on top. Serve with ice cream.

Another delicious recipe from my time at Panola General Hospital. To save time and nutrients may leave peel on cored apple and bake as directed. Any single pie crust recipe may be substituted.
