2 egg whites (room temperature)
2/3 c.sugar
pinch salt
1 tsp. vanilla
1 c. chopped pecans

Optional ingredients:
1 c. chocolate chips
or corn flakes
or crisp rice cereal
or coconut

Directions:
Directions:
Preheat oven to 350º. Beat egg whites until foamy. Gradually add sugar and continue beating until stiff. Add pecans and choice of other ingredient if desired. Drop cookies by teaspoon onto ungreased foil covered cookie sheet. They won't "spread", so they may be fairly close together.

Place cookies in oven and immediately turn off the heat. Leave in the closed oven overnight. Do not open the oven door until morning.
