1 small bag egg noodles or any pasta
3 tbsp butter
2 tbsp flour
2 1/2 cups milk
1 can tuna, drained
1 1/2 cups crackers, crushed
3 tbsp butter, melted
2 tbsp grated parmesan cheese
cheddar cheese (optional)

Directions:
Directions:
Cook noodles per package directions until almost done but still firm; drain. Make White Sauce: Melt butter in heavy saucepan. Add flour to make a roux. Do not brown. Add milk and cook until just thickened. Add tuna to noodles and mix with white sauce. Pour mixture into buttered baking dish. Mix coarsely crushed crackers and melted butter and spread over tuna mixture. Sprinkle with parmesan cheese and bake at 350º for 30 minutes. Remove from oven and sprinkle grated cheddar cheese over top, if desired. Serve hot.
