1 1/2 cups (18 cookies) cream-filled chocolate sandwich cookie crumbs
3 tablespoons butter, melted
3 (8 oz) packages cream cheese, softened
1 (14 oz) can Eagle Brand Sweetened Condensed Milk
3 eggs
1/4 cup cherry favoring or Cherry Brandy
1 (6 oz) packages of Nestle Toll House Semisweet Chocolate Morsels
3 tablespoons milk
1/2 teaspoons vanilla extract
whipped cream
1 (8 oz) jar Maraschino cherries, with stems, drained well

1. Preheat the oven to 300ºF

2. Combine crumbs and butter, mixing well. Firmly press crumb mixture evenly onto the bottom of a 9 inch springform pan.

3. Beat cream cheese at high speed with an electric mixer until fluffy. Gradually add eggs one at a time, just until blended. Stir in flavoring.

4. Pour mixture into prepared plan. Bake at 300ºF for 50-60 minutes or until cake is set.

5. Cool, cover and refrigerate overnight.

6. Combine morsels, milk, and vanilla in a saucepan over low heat, stirring until mixture is melted.

7. Pour glaze over cheesecake, allowing glaze to drip down sides of cake.

8. Garnish with whipped cream and cherries.

This recipe has been made with cherry flavoring and cherry brandy at different times - truthfully, it tastes better with the cherry flavoring vs. the brandy but depending on the theme of your dinner party you may go with the booze to add a little spice for the after dinner cocktails... serving with some cherry brandy in a glass alongside the slice the cheese cake can add some ambiance to the party with no hang over after effects.
