4 boneless chicken breasts
1 tbsp. grated orange rind
3/4 cup orange juice
1 tbsp. cornstarch
3 tbsp. soy sauce
1/3 cup corn syrup OR 3 tbsp. honey
1/4 tsp. ginger
3 tbsp. oil
2 carrots, sliced
2 stalks celery, sliced
1/2 cup green pepper, sliced (optional)
1/2 cup cashews
hot cooked rice

Cut chicken into 1-inch pieces, set aside. Combine next 6 ingredients. Stir well. Pour 2 tbsp. oil in wok and heat (325º) for 2 minutes. Add carrots and celery. Stir-fry for 3 minutes. Remove and set aside. Pour 1 tbsp. oil in wok and heat. Add chicken and stir-fry for 3 minutes. Add orange juice mixture, veggies and nuts. Stir constantly until thickened. Serve over hot rice.

Variation: add 1/2 cup sliced green pepper
