3/4 pound chicken gizzards
3 1/2 cups hot chicken or beef broth
2 tablespoons drippings or oil
4 tablespoons butter, divided
12 oz hot pork sausage
1/2 cup each chopped onions, celery, green pepper &
2 cloves garlic, minced
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon cayenne pepper
or a dash of Tabasco sauce
2 cups long-grain rice (basmati)
1/2 pound chicken livers, minced
Cream of Celery Soup

Directions:
Directions:
Boil Chicken Gizzards for at least 2 hours in chicken broth. Cook livers in the same fluid for the last 30 minutes. Reserve the liquid, add enough water to make 3 cups of fluid (to cook the rice)

Drain the livers and gizzards, allow to dry, and chop finely. Saute the pork sausage with the onions, celery, green peppers and garlic.

Cook the rice in the 3 1/2 cups of broth. A 15 minute cook with five minute cool down is fine.

Mix everything together. Cook in a 300º oven until heated. 45 minutes to an hour if it comes from the Fridge.

This can be made without the Cream of Celery Soup if you want to mimic the Popeye's brand.
