1 large or 2 small heads cabbage, chopped
4 T. butter or margarine
4 T. flour
1 qt. milk
1/2 lb. American cheese,cut into 1" cubes
1 T. Worcestershire sauce
1 T. Salsa Brava or other hot sauce
salt and freshly ground pepper to taste
1 1/2 c. crushed saltine crackers

Directions:

Bring 2 qts. water to a boil in a large pot. Add cabbage and simmer till tender. Drain in colander.
For the sauce melt butter in a large saucepan over medium heat. Stir in flour and cook 2 minutes or until lightly colored. Add milk gradually, stirring until smooth and thickened to the consistency of heavy cream. Add cheese pieces, Worcestershire, hot sauce, salt & pepper to taste and stir until cheese melts. Put well drained cabbage into buttered baking dish. Pour sauce over and mix well. Sprinkle crushed
saltines over all and dot generously with butter. Bake
at 375º for 30-40 minutes or until golden brown and
bubbly.
