1 c. salad oil
2 c. sugar
4 eggs
2 c. flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
3 c. grated carrots
1 c. chopped nuts

Directions:
Directions:
Blend oil and sugar. Add eggs one at a time and beat well after each addition. Sift dry ingredients and add to above mixture. Mix well. Blend in carrots and nuts. Baked in a greased and floured 13 x 9 x 2 inch pan in a 300° oven for one hour or until done.

Icing

1 (8-oz.) pkg. cream cheese
1/2 stick oleo melted
2 tsp. vanilla
1 box powdered sugar

Beat all together and spread on top of cake.

My brother-in-law Steve gave me this recipe. Carrot cake is Joe's favorite and I make one for him on his birthday every year.
