Main ingredients:
3 c. cooked, mashed sweet potatoes
1 c. sugar
1 T. vanilla
1/2 c. raisins or coconut
2 eggs slightly beaten

Topping:
1/2 c. margarine
1 c. brown sugar
1 c. chopped pecans
1/3 c. self rising flour

Directions:
Directions:
Mix main ingredients together and put into buttered dish (9 x 9).

Mix topping with a fork and put on top of main ingredients. Cover with foil.

Bake at 325ºF for 38 minutes. Take the foil off the last 5 minutes.

This is really more of a side dish, but that was not a choice.

I have never tried this recipe with raisins.

I always bake with Splenda for baking (white and brown sugar).
