2 tbsp. olive oil
3-4 chicken breasts, cut into strips
1/2 tsp. salt
1/4 tsp. pepper
3 1/2 c. hot water
1 medium garlic, minced
yellow rice mix (8-oz)
1 c. frozen peas
1/2 red pepper, cut into strips

Directions:
Directions:
Heat oil in skillet. Add chicken and brown (5-8 minutes). Add salt and pepper. Set aside. Bring water and garlic to boil. Add rice and chicken - bring to gentle boil. Cover and simmer 20 minutes. Add peas until warm (3-4 minutes) add red pepper (1-2 minutes). Serve.
