2 cups Hungry Jack Original Pancake & Waffle Mix
1 1/3 cups skim milk (adjust to make thin pancakes)
2 eggs
1/4 cup vegetable oil
Wild blueberries (optional)

Directions:
Directions:
Put ingredients in a medium sized bowl. Stir with a whisk. Keep adding more milk so batter is slightly thicker than melted ice cream. Adjust batter as needed to make thin pancakes. Heat a cast iron griddle. Pour one tablespoon of vegetable oil on griddle. Make a "test" pancake by dropping a large serving spoon of batter on the grill. Wait until the pancakes gets bubbly and brown. Flip pancake. Cook pancake until done and then use the spatula to push it around to make sure the entire griddle is seasoned and to mop up any extra oil. Make 4, 3-4 inch or 8, half-dollar pancakes on the griddle at a time. After each batch, walk away from the stove and add pancakes to the serving platter on the table. When you get back to the stove, the griddle will be hot and the next pancakes will brown perfectly. After you make a few batches of plain, add wild blueberries for my favorite pancakes. Serve with cold butter and syrup.

I use my mom's (Minnie's) cast iron griddle. The cast iron must get to be just the right temperature to make a nice and brown pancake. Also, I only buy prepared pancake mix where you need to add eggs, milk, and oil. The other types are not good.
